Updated school lunch standards cut the mustard, study shows

Federal nutrition program established in 2012 encourages kids to choose healthy, nutritious meals

A study led by Donna Johnson, UW professor of health services in the UW School of Public Health, and published today in JAMA Pediatrics found that students at Seattle-area middle and high schools chose healthier lunches after new standards established under the federal Healthy Hunger-Free Kids Act took effect.

“Nutritional quality, in terms of vitamins, minerals and fiber, increased and the calories per gram decreased,” Johnson said.
